Narezushi was thought to have been invented over 1000 years ago in the 8th Century. Originally, it was developed to preserve fish. The fish was preserved by packing it in fermented steamed rice. This technique uses lactic acid to give narezushi a distinctive taste and texture.
Preparation Process
There are several steps involved in preparing narezushi.
- Fresh fish is cleaned, salted, and then packed with rice layers.
- The mixture will then ferment for several weeks.
- After fermentation the rice is discarded and the fish consumed.
This ancient method preserved the fish and also added unique flavors to it, making it an absolute delicacy.

As sushi evolved, the fermentation process was gradually replaced by fresher methods. During the Edo Period (1603-1868), fresh fish was served atop small balls of vinegared rice. This represented a significant shift from the labor-intensive narezushi to a quicker, more accessible version that appealed to a broader audience.
Modern Sushi Varieties
Today, the sushi variety has expanded to include nigiri maki and temaki. These varieties reflect regional tastes and preferences. Despite narezushi not being as popular, it is still an important part of the history and tradition of sushi.
